Each cheese arrives vacuumed packed, keeping them fresh. Upon opening them, a waft of lovely fresh cheese hits the nostrils. I had a selection of different cheeses within my box produced from cows and sheep, from soft to hard cheese. Bergorino, Campagnolo, Caciocavalo, Pecorino Calabrese Stagionato, Percorino Classico Rigato, Percorino Monteporo, and Ricotta Affumicata. All can be used easily to make great pasta or risotto dishes. With my favorite cheese Caciocavallo, I used some of it to make a Spring Pea Risotto to serve 2. 1 cup frozen peas 800ml vegetable stock 1 tbsp olive oil 1/2 small onion, finely chopped 250g Arborio rice 1/4 cup dry white wine 1/2 lemon, zest & juice 1/4 cup grated pecorino cheese 1 tbsp butter 1 tbsp chopped Italian parsley Salt & pepper Precook the peas in boiling water. Heat oil and then cook onions until translucent. Add risotto rice. Cook for around a minute, then adds wine. Cook to absorbed. Then add a spoon of vegetable stock bit by bit. After 20 minutes, approximately the rice will be cooked. Add the butter, cheese, parsley, and lemon and stir. Then season and serve. Buon appetite! Buy yours now.
