Gettin' Grubby

I can't deny that I love my meat but from time to time I like to indulge in meals that are a little cleaner and... well, greener. In the past I've been pleasantly surprised by vegan dishes I have come across and my absolute favourite London vegan spot is East London's Palm Greens. However, when it comes to eating meat-free at home, I can sometimes struggle for inspiration or I don't have the time to invest in sourcing specific ingredients and produce.

I'd recently spotted Grubby reps out and about, and I was intrigued to see what the fuss was about. Grubby is a home delivery offering 100% plant-based meal kits with a generous list of recipes to choose from. These kits are a more convenient and fuss-free way to cook and enjoy vegan food for yourself. Each kit is filled with fresh, British produce packed with nutrients. Creamy mushroom and sweetcorn pasta: I couldn't say no to a mushroom and pasta combo and this dish did not disappoint. Once you've done all your chopping and prep this takes no time at all to whip together, ideal if you're cooking after a long day. While the pasta boils, you can create the sauce with ease using a handful of ingredients. Letting that simmer, you then blitz up a delicious nutty crumb to sprinkle on top. Served with a beautiful beef and parsley tomato salad, this meal has so much flavour and the mash-up of textures works perfectly. Miso Aubergine, Sticky Coconut Rice with Lime and Chilli Avocado: This meal really surprised me and I'd definitely make this again. It's a perfect light dish to enjoy on a Summer’s day with leafy, zesty goodness and gorgeous Asian flavours. Again, this was incredibly simple to make, whilst the aubergine roasts in the oven you can boil the rice and steam the kale. The avocado makes the perfect addition to balance out the heat of the chilli and the sweetness of the coconut cream added real character to the rice. A quick dinner to enjoy in less than 30 mins, I had enough left over to save for another portion to enjoy for lunch later in the week. I'm genuinely impressed with Grubby's kits, I have loved trying dishes I wouldn't ever think to make myself and I've really enjoyed eating feel-good food. I've yet to cook my 3rd recipe - the Sticky Peanut and Tenderstem Broccoli Rice Noodles - this will definitely make the ideal Friday night takeaway alternative.
